Sausage, Potato & Pepper Bake
Quick prep. One container. The oven does the work.

A simple weekday bake: sausage, baby potatoes, sweet pepper and red onion mixed with oil, mustard and herbs in the Loopware container, then covered loosely and baked until soft-edged and comforting.
Ingredients
- 120 g sausage (about 2 sausages), cut into 3 cm pieces
- 220 g baby potatoes (about 5–6 potatoes), cut into 1.5 cm pieces
- 100 g sweet pepper (about half a pepper), cut into chunks
- 50 g red onion (about half an onion), cut into wedges
- 1 tsp olive oil
- 1 tsp wholegrain mustard
- 1/2 tsp smoked paprika
- 1/2 tsp dried thyme
- Black pepper
- Optional: 2 tbsp water or stock for a softer casserole-style finish, or a little extra olive oil if it looks dry halfway through
Method
- Heat the oven to 200°C conventional / 180°C fan. Put the sausage, potatoes, pepper, onion, olive oil, mustard, paprika, thyme and black pepper into the 1.0L container and toss thoroughly. Add 2 tbsp water or stock now if using.
- Rest the lid on top loosely, without pushing it down to seal. Bake covered for 45 minutes, turning the ingredients halfway through.
- At the halfway turn, check whether the potatoes and sausage look too dry. If you are not using water or stock, add a little extra olive oil if needed.
- Bake until the potatoes are soft and tender and the sausage centres are piping hot with no raw colour. If you like a more casserole-crisp finish, uncover the container and bake for another 5–8 minutes.
- Rest for 5 minutes, then eat from the same container.
Tips
- The tested timing was 45 minutes at 200°C conventional / 180°C fan, with one turn halfway through.
- This is a generous portion for one adult. If you want it lighter, reduce the potatoes a little.
NoteThe container and lid get very hot in the oven — use oven gloves and put it on a heat-safe surface. Check the sausage is cooked through before serving. Charred residue washes off easily; some vivid marks may remain after washing, which is normal, and they fade over time. Not for the microwave.
